A commercial baker told me many years ago that one need not flour when greasing a pan with shortening; flouring is needed only when using butter, because of butter’s water content. Also, if you want a sugary texture on the outside of your cake, grease the pan with shortening, then sprinkle with granulated sugar. I use this method for a great blueberry pound cake.
