Hi Carol, high-altitude definitely makes bread proofing and baking more challenging, and since we're not at high-altitude here in Vermont, it's difficult for us to offer specific advice. We do, however, have this high-altitude baking guide, that does provide some helpful tips for yeast baking at high-altitude.
