Hi Sha, I would recommend weighing your baked croissant before and after adding the filling. This will give you an accurate weight for the amount of filling required per croissant. Divide this weight by the weight of an entire batch of filling, and you'll know how many croissants you can fill with that size batch. If your filling recipe only makes enough to fill 30 croissants, but you need to fill 300, you should be able to multiply the weight of each ingredient in the filling recipe by 10, to give you the increased recipe size. Of course, you'll need to consider whether or not your equipment is able to process the larger batch, or if you might need to make several smaller batches.
