I made a huge mistake and added 1/2 tsp (about 2.5 gm) of diastatic malt to my no-knead bread. A 0.2% amount of flour by weight would be 0.8 gm, so 3x recomended. Result is a beautiful camera-ready loaf the consistency of Play-Doh (with none of the flavor).
