Great question Stout. We design our Recipe of the Year with the largest number of bakers in mind so that everyone can give it a try! And because our bread flour is more readily available we chose to use this even though it has a lower protein content than the High Gluten Flour. Our test kitchen experimented with a ton of flours and we found that the Bread Flour gave us really great results with lots of tenderness AND chewiness!
