I just used some raised starter to make some dough for sourdough bread. Then I fed the starter again, while I was making my bread, but I'm not ready to make more bread and it raised again while I was making my dough ( 3 hours). It's doubled, what do I do? I didn't put it in the fridge right after feeding it. Do I put it in the fridge when doubled or keep it on the counter and feed it again in the morning? Is it bad if it falls while I'm sleeping?
