So then speaking of highest protein flour you don’t sell Sir Lancelot flour in 5 or 10 lb. bags anymore. I used to buy it from you. If one is going to go through the effort of making bagels and read the proper methods and materials you’d think you'd sell it, and not in 3lb. bags. And old time bakers used food grade lye or other base ingredient in the boil stage of making bagels
Real bakers don’t buy 3 lb. bags. :)
