Hi there, John! You can make your dough and cut the scones as desired, then pop them in the fridge to chill overnight before baking the next morning. We're not sure how much fermentation or how much the flour will break down as a result of this overnight chill though, we highly recommend consulting your doctor or dietitian to see if this is suitable for you and your diet.
