You certainly can double this recipe and make it in 2 loaf pans, Susan. I would recommend doubling the gram weights of each ingredient then dividing the dough in half prior to the shaping step. Each half should weigh roughly 1,140g. Remember to keep one piece of dough covered when working on the other so that it doesn't dry out. Happy baking!
