Nancy February 25, 2021 at 10:52am Some place on this blog, towards the beginning I think, it mentioned changing the hydration from 74% to 85%. I'm not familiar with how you figure this. I know that 100% is half flour and half water. How do I figure it for other percentages? Thanks! Reply
