I have two different Bread Machines. A Westbend 3 lb Hi-Rise bread machine and a KitchenArm 29-in-1. The KitchenArm has a Sourdough Cycle. The SD cycle is: Pre-heat 30 min, Knead 1 - 7 min, Rest 1 - 9 min, Knead 2 - 7 min, Rest 2 - 9 min, Knead 3 - 7 min, Rest 3 - 9 min, Knead 4 - 11 min, Rise 1 - 32 min, Punchdown, Rise 2 -43 min, Bake 50. The Westbend doesn't have a Sourdough Cycle, but does have a Customizable menu (somewhat limited with 2 Knead & 1 Rest & 2 Rise cycles). The KitchenArm can also be programmed. Do those times look reasonable or should I try the custom route & make a few changes. I definitely believe there needs to be much longer Rise times & would likely take the paddle out after the last Knead in the cycle. The max programmable Knead times on th Kitchen Arm are 30 min. The max Rest times are 30 min. The max Rise (3 of them) times are 1:10. Max Bake is 2 hours. You can't stall it in between. I'd have to go through & program 0 minutes in the sections I don't want repeated and then repeat the 3 Rise cycles. That would give me another 3:30 of rise time.

I have yet to make a loaf that I'm satisfied with i.e. several dried out bricks. I bake 2 SD loaves by hand weekly with great success.
