Quite a few years ago I started making pies in a 7” pie pan, it is exactly 1/2 recipe from a 9” pie. They also freeze well, I made up a bunch froze and took out of the pie pans and wrapped. I gave my Dad a pie pan and a pile of frozen pies for Christmas with directions to bake. He loved it. They make a great pie for single or couple families, and I can make several different varieties.
