Hi Tom, from your description, it sounds like you may have gone a touch overboard on the amount of honey you used. Bryan suggests that you "Finish with some drizzles of honey." I would keep the application of honey to the surface of the focaccia so that the honey does not run down the sides of the loaf onto the pan.
