I use whipped aquafaba to clump my granola! I fold the fluffy aquafaba into my oat/nut/seed mixture then spread it on a rimmed baking sheet lined with parchment. The layer is less than an inch thick. Bake in a low oven until crisp and golden. It makes smallish clumps but also adds a light crisp texture and added protein!
I save and freeze bean liquid of all kinds and use it as the broth in vegetarian/vegan soups and to make a vegan gravy for Thanksgiving.
