I live in Costa Rica and have several cacao trees where I've recently learned how to make my own chocolate! However, when making ice cream, I can't seem to get the cocoa powder I made from it to dissolve completely in the heated milk/egg solution. My husband loves it, but I would love to be able to know how to make it all dissolve when I want.
Any tips/tricks? All I do is take the whole cocoa beans and run them through a spice grinder right now.
