Hi Julie, normally you can go straight from the refrigerator to the oven, which makes transferring and scoring the loaves much easier. If you happen to be baking your bread in a pot that you're worried might be subject to thermal shock, you could let the dough acclimate in the pot for 45 minutes or so at room temperature before putting it into a preheated oven.
