Hi! So I’ve made this bread a few times now. I have a few questions, but I’ll just ask this one: I have a 6 quart container- I find at the end of 12 hours on the countertop the dough is risen to the very top. I find also that my loaves don’t rise as much in the oven- I’m wondering if it’s over risen on this first critical rise- how do you know for sure that it’s not over risen?
