We'd recommend starting by using it for 25% of the flour in the recipe. You'll likely need to add 1-2 extra teaspoons of water per cup of whole wheat flour. If you enjoy those results, feel free to increase the ratio of whole wheat. The loaf will be denser the more whole wheat you use. Happy baking!
