Hi Serene, Kye does offer this caution for the twisted rope style of bagels: For bagels shaped like simit, simply dip them in a mixture of water and molasses. The twists are delicate and tend to unravel if boiled. Use the water bath instructions in our Turkish Simit Breads recipe if you’re using this shaping method.
