Hi Michael, there are all kinds of sourdough recipes out there, and it is certainly possible to make wonderful sourdough bread that is entirely naturally leavened (no added yeast). That being said, some folks enjoy the rising insurance that a little yeast can offer, or prefer the flavor and texture of a "hybrid" loaf with both yeast and sourdough starter doing the work.
