Anthony, if your dough is not rising to its full potential, make sure that you are proofing it in a nice warm location, covered by plastic or if uncovered, in a humid environment. You may also want to check your yeast to make sure it is active. Even though you used a scale, if you think that it's possible that there was a measuring mistake, weigh the dough and see if the weight equals the weight in the recipe. Good luck.
