Ann, new oven woes can be so frustrating! We'd suggest trying out an oven thermometer, one that's not part of the internal mechanism of your oven, as ovens are notorious liars when it comes to temperatures. 25° off the mark is very common, and some ovens even run 50° hot or cold! You can see why switching from one oven to another might result in VERY different pies. Once you have an accurate read on your new oven's temperature, we think you'll find it's much easier to get your pie to come out fully baked. Happy baking! Kat@KAF
