I've actually baked this recipe several times hoping it would turn out well, but I've never succeeded. Every time I've baked this recipe, the cake comes out sunken in, craggily looking, and messy in the pan. The taste is great, but the look and texture of the cake is terrible. There doesn't seem to be any structure. Any tips? Should I change the AP flour to bread flour? Use less eggs and/or carrots? Amp up the temperature?
