Hi, Melanie! I veganize these scone recipes regularly at home! I tend to prefer homemade flax egg to store-bought egg replacers, but either should work well. And if your recipe calls for heavy cream, feel free to use full-fat coconut milk (the kind from a can) instead. It does give your scones a subtle coconut flavor, but I find this to be quite nice in scones!
