I have a warming tray that I use exclusively for letting my dough rise. We keep our house cool in the winter, so we need to use the warming tray so the dough will rise. I also use a KAF dough bucket, which helps keep the dough from drying out, and also keeps warmth in. I use the low setting on my warming tray, and also set the dough bucket on a straw trivet. It takes about an hour for the dough to rise.
