Hello,

Is there such thing as the dough is being over knead? And how to make sure those sweet bread remain soft not hard? I can make soft and fluffy Japanese Milk bread, but those sweet bread I tried, all came out hard. Why is that? The doughs were all proofed long and rose at least twice the size. I do use scale to measure ingredients.
