Our absolute favorite sweet bread that I bake for the Holidays and beyond, is your Quick Fruitcake (also know as 90 minute fruitcake). I always sub the candied cherries called for with high quality dried tart cherries, and use a mix of other premium dried fruits such as dates, figs, Turkish apricots, golden raisins, and unsweetened dried cranberries. It's even better the next day and freezes beautifully. I pre-slice the bread and freeze in a rigid container so we can take out only the number of slices needed. So nice with a cup of coffee or tea on a cold winter day.
