 Hi Tricia, thanks so much for your helpful comments! I've wondered myself about the temperature impact of using a metal vs a plastic or ceramic bowl for proofing. And I totally agree that room temperature has a huge impact on dough temperature for the home baker. This is a difference from bakery production, where the batch sizes are much larger and therefore a bit more temperature stable once they come off the mixer.
