Those are interesting questions, Thomas! You could certainly experiment with using juice in your preferments or tangzhong, although it will definitely have an affect on how the dough tastes and bakes. We did try combining tangzhong with sourdough (which works similarly to other preferments in a lot of ways), but found that the addition of tangzhong had a negligible effect.
