Years and years and YEARS ago I took some cake decorating classes from a wonderful instructor. One of the nuggets of information I picked up was this: if your cake layers had domed, right after you remove them from the oven take a paper towel, wet it thoroughly, squeeze the water out, spread the paper towel on top of the layer, and press down, gently but firmly.
