I am spending my winters in the Philippines where it is low altitude and over 80% humidity and very hot.
My summers are spent in Calgary Alberta Canada where it's high altitude ( over 3400 feet)
And very dry. Needless to say my yeast bread baking is all over the place. I'm having so much trouble getting my bread to rise properly when I'm in the Philippines.
Thank you for this information. I guess there will be a lot of experimenting with ratios in my near future.
