Hi Giggi, yes, this would also apply to those who live in southern climates who tend to keep their air conditioning on most of the time when it's hot and humid outside. Your flour may not be exposed to as much humidity as the outside air might indicate. It's worth keeping in mind that you can always add some or all of the liquid back into the recipe in order to develop a soft, supple dough.
