Ooh, I can't imagine a better way to wake up than to a perfectly done meringue treat in the oven, CJ! A Schaum Torte is pretty much just a pavlova by another name. It came before pavlovas, but they have the same (delicious) components; meringue, cream, and fruit. I've read that Schaum Tortes tend to have more color to them, which would give the outside more of a caramelized flavor, and that the inside is a bit softer, rather than the chewy/crunchy texture I've come to expect from a pavlova. I'd love to make a Schaum Torte recipe and a pavlova one at the same time to compare results. I'll wait for my grandpa's blueberry crop to come in and get to testing! Annabelle@KAF
