Hi Katelyn, depending on the size of the container you have the starter stored it may be more difficult for you to see the starter "double" in size. This type of activity is easy to see in an appropriately sized straight-sided glass jar that is taller than it is wide, but when the rise is more spread out in a wide bowl, it may not look like doubling. If you don't already have your starter stored in a clear jar, you might want to see what the rise looks like in that type of container. That being said, once the starter is rising predictably (even it it's not doubling), you do want to switch back to twice a day feedings, which will further promote yeast activity. Try transitioning gradually back to AP flour if you switched to feeding with a wholegrain flour, and increase the flour/water component back to the 1:1:1 ratio, by weight. Some bakers have reported that their starter hit another lull when they switched back to our regular feeding routine. Let me know if this happens and we can troubleshoot. I hope this helps!
