Hi Alexa, it's definitely going to be more difficult creating a sourdough starter with bleached flour, so you'd probably be better off starting over with another flour. I know it's not ideal to start over, and you could just transition to feeding with another flour, but either way I'm guessing it will take about 10 more days for you to develop a fully mature starter, so you might as well start with a flour that is more likely to lead to good results in the end.
