I have a question. I had read conflicting posts between a couple of sites. I am currently trying to start my very first starter from scratch. I have babied this thing, fed it only high quality flour, filtered water. Proper temps.... It WILL NOT rise. It is starting to get bubbles on the top and has a (what I consider) nice sour smell. My question, when I notice the "Hooch" collecting on the top, I've been stirring it in. I read on your page that you discard it. Do you think the "hooch" is killing or hendering my starter? It's 8 days old and I haven't tried to bake with it yet. Thank You
