I always blind bake my pie crust for pumpkin pie or pecan pie. It's a little extra effort, but for me a soggy pie crust ruins the whole pie! I might start doing it for fruit pies also. The pumpkin pie crust stays crispy for 2 days! If you are not going to Blind bake a pie crust, make sure you put a cookie sheet in the oven while preheating. Then place your pie on the preheated cookie sheet and put in the oven. Thank you King Arthur for addressing this issue.
