You explain everything so beautifully. My mother in law is always baffled as to why the bottom crust of my bread/cookies is softer and lighter than hers, and I can never quite make her believe that where you place it in the oven matters. Baking on the bottom sure seems to go brown! Confession: I love the soft “blah” pie crust!
