Your article was so interesting, you made me read a whole blog (which I kind of hate doing)! I make bread endlessly, and I’m always looking for ways to improve it. I have a 90% fusion in one wrist, so cannot knead a lot by hand. I use my bread machine’s dough cycle to “prep” the dough and finish it off by hand. I’m going to try the autolyse method for my whole wheat/white bread and pizza dough recipes. Thanks for the great science!
