Hi Jean, what a curious case you've shared with us here! We'd love to troubleshoot further, but we need a bit more information about your ingredients, method, and recipe. It sounds like perhaps the flour-yeast-beer mixture wasn't mixed quite enough before being left to rise. While kneading the dough isn't usually required in recipes like this, all of the ingredients should be fully combined. It's possible that there was a pocket of flour and beer that didn't get fully mixed in the day before.
