Dr.Oetker's, a brand from Canada, makes an excellent whipping cream stabilizer. It is sold in packets and is the easiest to use stabilizer made. One packet/one cup heavy cream. I live and bake in Austin, TX and I've used it for wedding cakes for summer weddings. I also use it for flavored whipped creams to keep in the fridge for grandchildren to "decorate" with. I use the unflavored, unsweetened and add either as needed.
