Hi there, although I wouldn't recommend kneading a very wet baguette dough by hand as an introduction to bread baking, it sounds like you gained a lot from this experience, and are a better baker because of it. I admire your undauntedness (definitely a desireable quality in a baker) and have no doubt your ciabatta bread will be a great success!
