Hi Greg: I'm assuming this would be just fine. Insert the probe from the side of the loaf, so it rests a bit on the rim of the pan. Angle it downwards a bit; you're trying for the center of the loaf. Insert it once the bread seems fully set; maybe 10 minutes or so before the estimated finish time? At that point the bread is set enough that a thermometer probe shouldn't affect its rise at all.
