Thanks for the response. I ended up using 1 cup brown sugar, 3 heaping tbs of cinnamon, 1/3 cup melted Earth Balance. Mixed that together and it made a bit less than I needed for two loaves. So, one loaf had that filling the other I expanded the mix by adding some plain applesauce. I used the basic rolling for both. The applesauce filling was very messy! But this dough is pretty forgiving. I was sure it wasn't going to work because it was a wet mess when I plopped it in the bread pan, but it rose just like the other. Both baked just fine, and taste great. The swirl isn't as strong in the applesauce version--maybe because the fluid was absorbed by the dough--but there is still a noticeable swirl and it's very moist. Yay!
