Lisa, brownies are definitely one of those things that dry out after a bit! You could try substituting in a little almond flour, but your best bet is probably to freeze half of your batch right after baking if you want to save them for later in the week. This is especially true since you're at a high altitude, where baked goods tend to dry out more quickly. They really do freeze beautifully! Kat@KAF
