I have a Miele combi-steam oven, and following is what works best for me. I have pre-programmed these settings into the oven so when I bake, I only touch white bread (my title) and it runs through these per steps automatically. It produces a Perfect loaf of artisan bread.
1. 104 degrees - 8 minutes - 100% steam
2. 122 degrees - 4 minutes - 100% steam
3. 415 degrees - 6 minutes - 50% steam
4. 400 degrees - 20 minutes - 20% steam
