Katie, those sound like some impressive pie plates! If you multiply each individual ingredient in the Classic Double Pie Crust recipe by 1.5, you should end up with a good amount. There might still be a little extra to trim off, but it's always good to have a touch too much dough than too little. It's probably worth making a note of the new amounts for the enlarged recipe before you start baking; the last thing you want is to have to pull out your calculator when you've got your hands covered in flour!
