Tammy, we don't recommend substituting coconut oil for shortening in pie crust, as it melts at room temperature. If you don't want to use shortening in your pie crust, either butter (or a good substitute like Earth Balance, if you're avoiding dairy) or lard are better options. Happy baking! Kat@KAF
