I use these two flours all the time with my sourdough! I make two loaves at a time, so I mix 200 grams active starter, 300 grams whole wheat, 600 grams unbleached white bread flour, 600 grams distilled (or filtered) water, 22 grams salt, and optional 2T honey. I wouldn’t be afraid to try wheat with your bread flour, it’s a delicious bread!
