This bread was good, but a little disappointing. I followed the recipe including weighing the ingredients, but it did not taste or smell like a yeast bread to me. The texture (mostly the bottom crust) seemed crumbly like a soda bread would be. It seems odd to me because there is such a large amount of yeast in this recipe. We also decided that if we are going to eat cheese bread, we would rather have chunks of cheese instead of just the flavor of cheese. I guess for us part of the pleasure of cheese is the texture of it, especially when it is still a little warm. I made it into a loaf by braiding it and putting it in a loaf pan. I put a very light covering of flour on the work surface but I think even that was too much because the braids separated a little after baking. Some slices sort of fell apart which was a problem if toasting it or making a sandwich. I think that could be remedied by making sure the dough logs did not have any flour on them. Again this was good, but not what we were looking for. I love KAF recipes and will keeping trying until we find the right recipe. It is fun to experiment with new recipes and I don't expect them all to be to our liking.
